In my opinion theories like these were and still function as mnemonics to help remember what herbs do, and perhaps in the past to give a guideline to working out what a new or foraged herb might do. However, there enough exceptions to the rule that it seems pretty clear that ancient people did not stick to it dogmatically when it was not working.
